  • 1 large Heirloom tomato
  • 2 ripe peaches
  • 1 organic cucumber
  • 1 red onion
  • 180g of good quality cured goats cheese
  • 1 pinch of Algarve sea salt
  • 2 twists of freshly cracked black pepper
  • 1 tablespoon of extra virgin olive oil
